I love this cake. The best part of it was when I delivered it, there was a little girl there... she looked at the cake and was so impressed... She finally looked at me, and said: "That is a huge cupcake"... I just loved it! She made my day!

Helping Haiti...

Amanda's Apple Cake
Finally, Amanda, I found the recipe...
Ingredients
2 cups of sugar
1 1/2 cups of vegetable oil
3 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 ts baking soda
1 ts salt
1 ts ground cinnamon
3 cups peeled, diced cooking apples
1 cup chopped pecans
1. Combine sugar, oil, eggs, and vanilla in a large mixing bowl; beat about 1 minute at medium speed of electric mixer.
2. Combine 2 1/2 cups flour, soda, salt, and cinnamon. Gradually add to sugar mixture, beating at low speed of electric mixer until blended.
3. Dredge apples and pecans in remaining 1/2 cup of flour, fold into batter.
4. Spoon batter into a 10" tube pan or two 8" greased pans. Bake at 325 degrees.

Absolutely adorable...!
Isn't this picture lovely? I wouldn't eat these cupcakes, I will just stare at them... for hours... and probably, I would smell them... fresh baking... vanilla... Lovely!
