Happy Thanksgiving!


I am celebrating the long weekend already! I baked apple muffins this morning to have with my cup of Pumpkin coffee (Thank you, Jeannette!). So, we officially started our Thanksgiving weekend.
Please, spare those poor turkeys and eat these muffins instead :))

Apple Muffins (1 dozen)

1 1/2 cups of flour
2 ts baking powder
1/2 ts salt
1 cup of sugar
3/4 cup of oil
1/2 cup of milk
2 eggs
2 ts vanilla extract
1 apple, peeled and chopped
1/2 cup pecans

1. Preheat oven to 350 degrees.
2. In a bowl, combine dry ingredients.
3. In another bowl combine oil, milk, eggs, and vanilla, and beat until creamy.
4. Mix all ingredients together, and then fold apple and nuts.
5. Spoon into muffin pan lined with paper cups, and bake for 25 minutes.
6. Remove immediately from pan and cool on wire rack.

Gabrielle's Full Moon Celebration


This baby dragon cake for Gabrielle's full moon celebraton was a pleasure to make. I did the wedding cake for Gabrielle's parents in the past, and I was very happy to be able to share this special event with them, too. The cake was all covered in fondant and painted with edible gold.

A beautiful view...

This wedding took place at the Canada Convention Centre, next to Canada Place, which provided a wonderful backdrop of the North Shore mountains and the ships leaving to cruise the Inside Passage. The cake was brush embroidered and covered with Swarovski crystals.

Canada Day Weekend...

So far, a great weekend! In spite of the weather on the West Coast, it has been lots of fun.  Starting with pancake breakfast on Grand Boulevard, followed by the parade, and later on, eating from a huge cake at the Burnaby Village... Great weekend! I hope you had some fun, too, and that you ate lots of cake! ;)

How to make the Yoda cake


For the Yoda cake, I used two 7" layers, and two 6" layers stacked together with buttercream. Then, I just carved around giving the dome shape. I used toothpicks to attach the ears to the head, and edible glue to attach hands and feet to the body. It's a pretty cool cake to make!

I have made an edible Yoda many times as a cake topper, but this time the request was for a bigger Yoda. The actual cake needed to have Yoda's shape. And here he is. He looked great! And I know he tasted good, too! :)

Cream Cheese Icing

Ingredients

1/2 cup of cream cheese
2 tb of butter
1/2 tb of cream or sour cream
1/3 cup white chocolate
1/8 ts vanilla extract

1. Melt white chocolate in double boiler.
2. Allow chocolate to cool
3. Mix cream cheese, butter, and cream until smooth. 
4. Add the melted chocolate and vanilla extract
5. Use right away.

Pink Calla Lilies!  This pretty cake was done by Jane during the "Tall Cakes Class", last Saturday, at Michaels, Park Royal, West Vancouver.  Perfect for West Vancouver 100th Anniversary!  Great job, Jane!

Three princesses and two squirrels...


This cake was a special request: 3 princesses and 2 squirrels.  And blue icing.  That was it!  The princesses chosen were: Belle, Ariel and Jasmine.  Very charming girls!  And the squirrels were done in chocolate fondant.  Not too bad, eh?

Happy birthday, Sienna!


Sienna loves unicorns and rainbows... so nothing better that having a rainbow unicorn cake for her birthday!  I love rainbows, too!  And I really enjoyed making rainbows out of fondant.  It was so much fun!  You can use your ribbon cutter to make these rainbows.  Give it a try!

Ninja party!


This 3 tier Ninja cake was made for Ninja Samuel, last Saturday.  It was a lovely martial art party full of little ninjas running around... I really loved the design finished with a fondant black belt around the tiers.  Happy birthday, Samuel!

My breakfast this morning...


It took most of the morning to get to eat them!  First, I had to bake them.  Then, I wanted a picture of them... and finally, after quite a while, we ate them with some orange marmalade... Mmmm!!!

Raisin Scones (12 scones)  Oven: 350 degrees

3 cups of flour
1/2 cup of sugar
4 ts baking powder
1/8 salt
1 cup of butter
1/2 cup raisins
1 tb grated orange zest
1 large egg
1/2 cup milk

1.  Line 2 baking sheets with parchment paper.
2.  Combine flour, sugar, baking powder, salt and butter in food processor. 
3.  Add raisins and orange zest.
4.  Combine egg and milk.  Add to dry ingredients and mix by hand to make a nice compact dough until all the flour is absorbed.
5.  Divide dough in half and shape into 2 balls.  Flatten balls and cut each into 6 wedges.
6.  Bake for about 25 or 30 minutes until light golden brown. 
7.  Enjoy!

I love pink... so today for my baking, I thought I could use some pink eggs!  Mmmm!  Maybe not, maybe I should stay with my old sugar cookie recipe...?  Anyhow, I'll see what I can do.  In the meantime, have a Good Friday!!!

Happy birthday, Bruce!


I forgot how many cakes I have made for Bruce, but one thing reamains constant: chocolate!  He likes chocolate, and so this cake is for him: chocolate cake, filled with chocolate ganache, and iced with chocolate buttercream, wrapped with a chocolate fondant ribbon!!!

Happy Birthday, Danielle!!!

When people ask me how long I have been making cakes, I always answer "for a long, long time"... Well, now I can tell you I have been making cakes for more than 9 years! 
Danielle's first birthday was one of my first cakes.  Very pretty cake in orange and yellow, 2 tiers, with butterflies... Unfortunately, I didn't have a good camera then, so I don't have a picture of that one.  And then, I kept on making her cakes: through princesses, pirates, and now this: an electric guitar!!!   It's been fun to see her grow through all her cakes... All I can say now is: Danielle, you ROCK!!!

Chocolate pudding!  The best comfort food for these long rainy days... It makes a great cake filling, but I like it just like this... some cream on top... Mmmm... So good!
